In my Global Issues class, the students have been learning about the state of affairs in Eastern Kentucky. They read a New York Times article entitled, “What’s the Matter With Eastern Kentucky?” It’s the Economy by Annie Lowery and they also read a Kentucky Health Issues Poll concerning “The challenges Kentuckians face to improve their health.” Raising their own gardens is one way to promote healthy eating at an affordable price. The plan is to have students to document the process of raised bed gardening (from constructing the beds-harvesting) in video format to share with other students. The problem I encountered last year was keeping 12th graders engaged in the process from beginning to end. Some of their enthusiasm dwindled when faced with going outside when it was cold. Oh well…. wish me luck!
