    Late January isn’t typically the time of year that Kentucky gardeners go to the backyard and harvest greens for salad! Lucky for us, the school garden at Pikeville Elementary School is thriving! The students were able to harvest enough kale, pak choy, carrots, turnips and radishes for 2 days worth of kale salad in the cafeteria. Our students are going back for seconds and show such excitement when the “School Garden” sign is posted. We will be keeping the beds safe from the cold temps under the low tunnels while continuing to enjoy fresh greens from our backyard at school! The next green to add this week will be mache’ which is a small tender green that is so mild and sweet! It is a wonderful winter crop and easy to grow!!
